For kettle sours, we use Lactobacillus bacteria strains to create unique flavors in a very controlled environment. For our wild sours, we ferment the natural yeasts in The Colony, Texas for some uncontrolled goodness in the beer. Inspired by the roaring 20's, Greenville Theater mirrors the style of underground speakeasies and one of Gatsby's more 'intimate' party settings.
